Traditionally we make our Christmas Cake during the October half-term holday.
We use my Mother-in-Law's recipe, it's yummy and not as heavy as some fruit cakes.
I thought it would be nice to share it with you
10oz plain flour
1 teaspoon baking powder
3 tablespoons brandy (or apple juice)
8oz currants
8oz raisins
8oz sultanas
2oz glace cherries
1oz mixed peel
8oz butter
8oz dark brown muscavado sugar
2 eggs
Half a large tin of evaporated milk.
Place dried fruit, cherries and mixed peel in a bowl, pour over evaporated milk and add brandy. Leave to soak.
Cream butter and sugar.
Beat eggs and add to the creamed butter and sugar.
Add half the flour and half the fruit mixture and fild in.
Add the rest of the flour and fruit mixture and fold in.
Put into a greased and lined 8" cake tin and bake at Gas 2, 300F or 160C for 2 and a half hours, or until a skewer comes out clean. If the top is starting to catch, cover with some foil.
