Hi folks! This week I have been very busy making cakes. A leaving party and a 40th! I thought I would share a couple of my personal tips for cakes. I always use a maderia sponge as thi is solid enough to carve and ice while still being moist. My first tip is one I use to make grass- a garlic press! Perfect for little clumps to add here and there.
The next is mixing colours. I use a knife as this mixes brilliantly with out the need to handle the icing and make it sticky- it's much quicker too!
This is one of the finished cakes- it was very popular with my lovely manager! I hope the hints come in useful!
