We like to bake at home, and Lilli, my daughter, and I thought we would share our current favourite, Coconut Paradise slice. It's one our friend makes.. well along with some of our tweaks.
They really are very easy to make, which by accident I realised is gluten-free! (just double check your chocolate) How great is that! We have several friends who have problems with gluten so this is a good one for parties etc.. It is very easy to make.
You need:
100g/3.5 oz butter
200g/7oz plain chocolate
200g/7oz caster sugar
2 large eggs
200g/7oz desiccated coconut
100g /3.5 oz sultanas
100g/3.5oz glace cherries
Grease and line a square 23cm/9 inch baking tin. (I must admit I don't grease mine just line it). Break the chocolate into pieces and melt it either over a bowl of hot water or in the microwave (be careful not to burn it). Stir until smooth and pour it into the tin, covering the bottom. Place in the fridge to chill for an hour.
Preheat the oven to 180 degrees/350 f/Gas mark 4. whisk together the butter and sugar till pale and creamy. Lightly beat the eggs and add to the mixture along with the coconut, sultanas and glace cherries. (I chop the cherries in half as I like them smaller). Spoon the mixture on top of the chocolate and spread out evenly. Bake in the preheated oven for 30-35 minutes until the top is golden brown. Leave to cool and cut into 16 pieces.

You need a high percentage chocolate. I buy ours from a well known german discount supermarket and pay only 35p for 100g bar. A good bit cheaper than some of the well known brands. This recipe is a favourite for friends and family and get rolled out for School fetes, work celebrations etc. I am a firm believer in cake bringing people together!
