Did you ever try these muffins Paula showed us?
These cakes give you the best of both worlds as they are a doughnut and a muffin combined and justHAVE to be tried. Even novice cooks should have a go at baking them (in fact, all muffin recipes), as they are simple to make, just throw all the wet ingredients into the dry ones and stir a little to combine them. The secret to a good muffin is not to overmix the ingredients, so perfect for when you have little time or arm power!
INGREDIENTS
- 125ml milk
- 85ml light olive oil or vegetable oil
- 1 egg
- 1/2 teaspoon of vanilla extract
- 200g self raising flour
- 100g caster sugar
- 12 teaspoons of jam
TO FINISH THE MUFFINS
- 100g butter
- 150g sugar
Beat together the milk, oil, egg and vanilla extract. Stir this into the flour and caster sugar and mix gently to combine. Fill the holes of a muffin tin a third full with the mixture, add a generous teaspoon of jam on the top, then cover with the remaining mixture. Bake for 20 minutes, or until the muffins are golden and cooked through. Remove from the tin and allow to cool completely on a wire rack.
To finish the muffins, melt the butter and place the sugar on a plate. Roll each muffin in the butter then the sugar.

Oh they look lovely, always like to make muffins because they don't contain a hard fat and I hardly ever have butter in but do usually have a bottle of vegetable oil lurking for just the occasion - plus they are super quick to make. I actually have an 11 year old who managed to make some from beginning to end on his own recently - just needed assistance getting them out of the oven and washing up! A favourite is banana and chocolate chip using up over-ripe bananas and because they are 'wet' you can cut down on the amount of oil you use!
