Hi Joy here, this week I have been inspired by the Great British Bake Off watching the programme makes you want to rush straight into the kitchen and start baking. I like the different takes on traditional recipes and this got me thinking about Lavender Shortbread. I had seen jars of lavender sugar in the supermarket but it was always expensive. Surely with all the lavender in the garden I could make some?
Push the lavender flowers off the stem with a fork.
Add the flowers into a jar with your sugar. I first put it into a quite large jar so that I could shake it up and disperse the flowers.
I found some lovely airtight jars in Lakeland to decant my mixture into.
I added a quick label and a flash of purple ribbon so that I could find it easily in the cupboard. I used it to make some shortbread which was delicious. I would have had a picture of it too but the children ate it before I could get my camera! When making the shortbread, sieve out the flowers from the sugar as you add it to your mixture,
I thought I may make some more for Christmas presents and print out some smart labels for them. I have considered making vanilla and cinnamon sugar as well.

Looks so pretty, Joy - I must let my Mum, who adores lavender, know about making your own lavender sugar. Things like a vanilla pod take such a long time to really seep through the sugar, that a jar of it as a Christmas present would really go down well. I can't count the number of times I've gone to the drawer for some and realised I'd run out - and it's too late then! Great idea!

I wish it wasn't raining so I could make some.
I always keep a couple of vanilla pods in my caster sugar but love the idea of lavender sugar.
