I am full of excitement as I have just broken up from school for the summer holidays. 6 weeks stretch in front of me and I am full of ideas of things to do. Most of them ideas from this site. I have a basket of wool and a drawer full of fabric ripe for creating. After a fruitless search for a camera bag I actually think my first project will be to try and create one. If I am successful I will share here.
My contribution for today is a summer recipe. I like filling the fridge and the freezer with summer food. Things that you can just throw together into a simple meal. Tomatoes, basil & mozarella cheese. Olives, sun dried tomatoes, grapes.....oh I should really have been born in the Mediterranean as that is my favourite type of food. I could happily picnic every day. I have a favourite Summer Pudding - Lemon Bombe.
Lemon Bombe
- 500ml whipping Cream
- 1 jar lemon curd
- 6 meringue shells
- 1 bag frozen fruits of the forest
- icing sugar
method
- Line a pudding bowl with cling film.
- Whip the cream until in stiff peaks.
- Fold in lemon curd.
- Crush meringue shells and fold in.
- Pour mixture into pudding bowl.
- Cover with cling film and freeze.
To serve
- Defrost fruits of the forest.
- Add icing sugar to taste.
- Tip out bombe.
- Pour over the sweetened fruit.
- Allow to slightly soften before serving.
you can also use orange or strawberry curd and substitute suitable fruits for the topping.
A quick update on the gardening competition, that I wrote about last time. We received the Mayor's Special Award, The Best Portfolio & a Silver Gilt Award. The children were delighted. We will go to a ceremony, in September, in the Town Hall.

LOL at Carmen, it's today now, hurrah.
Scrumptious sounding dessert, have everything bar the cream, so off to Tesco we go.
