Summer can't make up it's mind if it is here or not. We have had 3 seasons the last few days. But my mind has been thinking about summer entertaining. As I have said before I have a got a new kitchen, and in the process of filling the new cupboards I have found all sorts of interesting things that I had forgotten about. Cook books, an astonishing variety of cookie cutters, gadgets that looked good at the time and a box with my recipe cards and lots of folded up bits of paper, which have recipes scribbled on them, from a variety of friends and family.
Amongst them I found this;
It was a favourite recipe of my Mum, that she wrote out for me a long time ago. My Mum will have been dead for 7 years this year but the afternoon that I found this I felt a sudden connection with her. It is funny the memories that a small piece of paper with familiar handwriting will bring.
So this is the recipe I thought I would share with you. My Mum would have loved this blog and would have been thrilled to have one of her recipes mentioned.
Salmon Mousse
- 1 small can of salmon
- a packet of smoked salmon trimmings
- 2 tbsp lemon juice
- 2 tsp tomato ketchup
- salt & black pepper
- 4 tbsp powdered gelatine
- 1 small can chilled evaporated milk
- 2 egg whites
Method
- Drain and break up the salmon from the tin.
- Stir in the lemon juice. ketchup and seasoning. Add smoked salmon.
- Put gelatine in a teacup and add water. Place cup in a pan of water and and stir over a low heat. Until clear.
- Stir gelatine into salmon mix.
- Put evaporated milk in a bowl and whisk until it doubles in size. Fold in salmon mixture.
- Whisk egg whites and fold into mixture.
- Divide mixture between serving pots - there is enough for six generous servings.
- Chill
- Serve with crusty bread or melba toast.
I have also been teaching myself to crochet. This came about because firstly I coveted the bag that was featured here a few weeks ago and secondly because of my daughter's blankie. My daughter is 15 yet still has the blanket that my mother-in-law crocheted for her birth. Sadly she died shortly after Rosie was born. But Rosie has slept with the blanket for 15 years. The blankie is a little worse for wear - actually it is a collection of woolly strands - but she is very attached to it. I am actually scared to wash it now!
I thought I might unravel the wool and combine it into a new blanket. So I have been learning how to make Granny Squares. I have got a small pile, which I have been adding to while the football is on. I need to learn how to join them together. Then I am going to edge the blanket with the rescued wool from blankie.
Hopefully she will be able to snuggle up to this blankie for at least another 15 years.
I must just finish with my cupcake. I am very proud of it. Duncan and I went to a cupcake workshop and this is what I made.
We had great fun and have been making cupcakes non-stop since!

Ditto here. When my Mum passed away I was lucky enough to get her recipe book (we all took something personal with her writing in) just looking ati t brings back memories of Sunday afternoons causing mayhem in her tiny kitchen.
What a lovely idea with the blanket as well :)
