Nothing says Christmas like the aroma of spices wafting from the kitchen, and I promise, you won't be able to resist the smell of these cookies! They are also a doddle to make:)
INGREDIENTS
- 75g (3oz) butter
- 4 tablespoons golden syrup
- 100g (3 1/2 oz) caster sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- large pinch ground allspice
- 300g (10oz) plain flour
- 1 teaspoon bicarbonate of soda
Preheat your oven to moderate, and line two baking trays with non stick liner. Add the butter, syrup, and sugar into a saucepan and heat until the butter has melted and the sugar is dissolved. Place the flour, spices and bicarbonate of soda into a bowl, and pour onto the butter mixture. Stir gently until you have a smooth dough. You can add a few drops of milk to the mixture if it seems too dry.
Allow the dough to cool, then roll out onto a floured surface and use your favourite Christmas shaped cutters to make your cookie shapes. Reroll all the trimmings, then continue cutting until all the dough is used. Place the shapes on to the baking trays, and cook in the oven for around 10-12 minutes. When cooled, you can have fun decorating them with your favourite icing and sweets!
