Welcome to the challenge, how many ways can you emboss?
Peppermint cream anyone?
When my children were growing up, we would often arm ourselves with a roll of lining paper and Crayola wax crayons and go for a stroll around the house, or out into the street. There were so many interesting textures to take rubbings from, anaglypta wallpaper to manhole covers, you name it, we rubbed it.
For the workout, however, I decided to make cupcakes. I used my cuttlebug folders and some texture plates to emboss fondant icing, cut out circles and that was that.
You could use more colourings than I did, or add other little edible fancies and sparkles, but icing did it for us.
The fondant creams were simply flavoured with peppermint essence, coloured with blue food dye, and embossed with the snowflake folder before cutting out with a small round cutter.
The fondant didn't stick to the embossing folders, and they were quickly washed up, dried and put away.

Wow - what an awesome way to emboss. Yummy in every sense of the word.
I am afraid my offering is far more basic and not nearly as tasty.
I needed a quick card to send off and so, as I often do, I turned to my trusty little bug to dress things up a little bit.
I used a piece of textured cream card for the background and ran it through the Cuttlebug in an embossing folder. Once it was embossed I used a couple of distress inks in dried marigold and spiced marmalade to add colour and show the embossing off in more detail.
I blended it so it was darker in the corners and lighter towards the middle.
The butterfly stamp is also embossed but this time heat embossed, using clear embossing powder so it just makes the butterfly shine.
You can also get an even simpler effect by running white cored card through the little bug and then sanding slightly to show off the embossing as I did with this card.

I've been playing with a Stampotique stamp (Karin) my threading water punch & a Cuttlebug Swiss Dot embossing folder. I was actually working on 2 projects, Embossing for Eleanor's Weekend Workout & use acetate for the Stampotique Designers Challenge, but somehow the 2 projects turned into one & here is the result....
The houndstooth pattern is printed on acetate (it could be Pink Paislee of October Afternoon, I'm not sure, I know it came in a kit containing those papers), I've used 4 gems to hide the dots of glue in the corners that are holding it to the card - there's also some double sided sticky tape hidden under the scalloped border
I created a scalloped edge strip by using the threading water pucnh then running it through the Sizzix with the Cuttlebug Swiss Dot folder. I coloured Karin in with my Promarkers. The call me sticker IS an October Afternoon one, you could use the card as either a cheeky little flirt with someone who's caught your eye or maybe just to remind an old friend that a catch up over tea & cake is called for.

Ooh, I love embossing and have plates for my quickutz and the revolution and so much embossing powder I can't tell you. And yet I hardly ever remember to do it! You've inspired me :-)

This is a craft technique i've tried ages ago not with icing though, Might just have another go !
